| Wild beets still grow along the Mediterranean coast where they seem happiest. Beets are a member of the ubiquitous goosefoot family. As their color indicates, beets are a blood tonic and so are good for anemia, the heart, and circulation. Beet greens are high in oxalic acid (and so are not to be eaten excessively), but when young and tender, they make an excellent salad green. |
