How to Consume Raw Almonds
There are many creative ways to eat your daily supply of almonds. Some people shy away from almonds and other nuts because they are high in calories and they are afraid of gaining weight. Not to worry. Almonds are so nutrient-dense, that even one handful (approximately one quarter cup) per day can provide significant amounts of vitamins, minerals, protein, and other nutrients without excessive calories.
SUGGESTED USES: Almonds are delicious in stuffing meat and poultry dishes sauces and salads. They enhance the flavor of cakes, muffins cookies and granola mixes. Try organic, raw, chopped almonds on salads, steamed vegetables, in yogurt and smoothies, on cereal, or just plain as a nutritious snack to boost your energy and help prevent disease. You can also use a food processor to make your own almond butter from raw almonds. This is delicious served on a celery stick or as a sandwich on whole grain bread.
Because of their high fat content almonds should be kept in a cool, dry place in a tightly closed container. They also freeze well.
WHEAT FREE ALMOND COOKIES
1 1/2 C. Shiloh Farms Brown Rice flour
2 Tbsp. soybean flour
1/2 tsp. Baking Powder
1/4 C. Butter
1 fresh Egg
2 Tbsp. Honey
1 tsp. Almond extract
Approx 24 SHILOH FARMS WHOLE RAW ALMONDS
Directions:
Combine dry ingredients.. Cream butter, egg and honey. Add dry ingredients to butter mixture, Add almond extract. Thoroughly mix. Drop on the baking sheet by teaspoonful, and press an almond into the center of each cookie. Bake at 350 degrees for 12-15 minutes.
Makes approximately 2 dozen cookies
