Organic Buckwheat Groats are the hulled seeds of the buckwheat plant. These soft seeds are light in color and have a distinct mild nutty flavor. Buckwheat does not contain wheat or gluten, and is high in protein and minerals and B vitamins.
TO COOK: Sort and rinse. Add 1 part groats to 2 parts of boiling water. Cover and simmer until tender or water is absorbed, about 15 to 25 minutes. For more flavor, coat the groats with 1 Tbsp of oil for every cup of groats and toast in a heavy skillet over moderate heat, stirring frequently, until they become a shade darker and very aromatic, about 4 to 5 minutes. Then add to the boiling water and simmer over low heat until the water is absorbed and tender (about 15 to 25 minutes).
Suggestions:
1. Dress up cooked groats with lots of browned onions and a bit of parsley or dill.
2. Try them in stuffed cabbage and in soups.
3. Use groats as a substitute for rice or bulgur
4. Use as a hot cereal, add your choice of sweeteners, dried fruits or nuts.
