| SPELT BANANA BREAD
3 bananas, very ripe
1 lemon, juiced
1/2 c. butter
1/2 c. Shiloh honey
1 3/4 c. SHILOH WHITE SPELT FLOUR
1/4 c. Shiloh rice bran
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. Shiloh sea salt
1/2 tsp. cardamom
1 tsp. cinnamon
1/2 c. chopped Shiloh walnuts
Preheat oven 375F. Mash bananas with lemon juice. Cream butter and honey, add banana mixture. Combine flour, bran, dry ingredients; add to banana mixture, fold in walnuts. Use1lb loaf pan and bake for 35-45 min. Cool completely before slicing and serving. For a dessert, top with fresh fruit.
Ingredients: Spelt grain milled on roller mill with bran germ removed
